Sumo One pot Salad with Brined Raw Mango

I thought of naming it sumo salad as if you eat a decent size bowl of this salad you are done with your entire days protein and you can be full for a very long time. Ideal when we are into intense workout or do intense yoga. Soya, groundnut and chickpeas all will take lil extra time to digest however the addition of loads of raw vegetable keeps it balanced. I added baby raw mango(pic attached ) which was the different element in this dish. The tartness from the raw mango in salt brine was just yummilicious.Throughly enjoyed making this one and relishing it thereafter😊


RECIPE:
• Prep mini soya chunks and stir fry in cast iron pot on a high flame. Once charred add rock salt and dhaniya jeera powder. keep it aside.
• Toss together, soaked groundnut, soft cooked Ckickpeas, lots of chopped brined raw mango, chopped coriander and mint along with tomatoes. Add the prepped soya, adjust seasoning and get ready to devour this meal.πŸ˜€πŸ™
