Peanut Carrot Salad

Inspired by the humble sundal is today's salad. I added soaked as well as lil roasted peanuts and coconut which added a beautiful nutty crunch to the finished dish.

Ingredients:
Peanuts (Organic)
Carrots
Coconut Oil
Mustard Seed
Cumin Seed
Coconut
Coriander
Rock Salt

1. Soak organic peanuts over night.
2. Grate carrots and keep aside.
3. Prepare a temper with coconut oil, mustard seed, cumin seed and fresh coconut. Once the coconut turns golden brown remove from flame. Cool.Add Rock Salt according to taste.
4. Toss all together along with some toasted groundnuts and garnish with chopped coriander.
